Negra Mole is the identity grape variety of the Algarve, recognised by ampelographic studies as one of the oldest in Portugal. It has had great regional expression, coming to represent the majority of vineyards in the 1980s. It's a late-ripening, drought-resistant vine, common in sandy soils and often grown in open fields. The bunches are medium-sized and the berries can vary in colour, from bluish-black to pink, which helps explain open-coloured wines. Historically, it was the basis of Algarve palhetes and clarets, often served slightly chilled. In terms of sensory profile, it tends to produce light to medium-bodied reds with lively acidity, soft tannins and aromas of cherries and red fruits, sometimes with a slight salinity and subtle herbal notes.
