The grapes were carefully selected, destemmed and pressed. Fermentation took place in small stainless steel tanks at a controlled temperature (14ºC) for 23 days. The wine was aged for 6 months in French oak and American oak, using batonnage for 3 months.
With soft straw tones, this is an aromatically intense wine with a marked complexity. The woody notes come through elegantly, with almonds, toast and caramel in particular, but it's the grape variety that imposes itself, with stone fruit (loquat), some tropical nuances, especially melon, and a bakery flavour, like warm toasted bread. The palate is fresh and elegant, with a harmony between salinity and minerality that makes this wine intense, persistent and unforgettable.
Our story arises from the enormous legacy left by our family, a passion for the land that is difficult to control and the desire to create unique wines associated with a special and unsettling terroir.
