Fermentation of the berries, clean and by separate varieties and without crushing, in French oak vats Seguin Moreau, with controlled temperature and for a long period. Own yeasts. Malolactic fermentation in Seguin Moreau barrels by variety for 24 months. Minimal application of sulphites. Blending of grape varieties, bottling and aging of the wine in the bottle for 8 years, on the estate.
